Maja Blanca is widely known in the Philippines. Mostly, it was served on birthday, fiesta or any occasion in the country. The original recipe doesn't include milk. They only use coconut milk and top with latik. My version is much easier to cook. It is yummy and I am sure your families and friends will like it. I
I learn to cook it from my sisters. We like to cook desserts if there is a gathering in our house. Many of my friends ask me how do I cook Maja Blanca so now I want to share with you how do I cook Maja Blanca. I know you can cook it well too if you just follow my step by step instructions.
Maja Blanca with sweetcorn and raisins.
Ingredients
2 cups cornstarch
6 cups coconut milk
1 can condensed milk 380 ml
1 can evaporated milk
1 can sweetcorn
3/4 cup white sugar
1/4 cup roasted peanuts crumbs
1/2 raisins

The ratio of the cornstarch and the coconut milk should be 1:3 because you will still add condensed milk and evaporated milk. Do not go beyond a 1:4 ratio for cornstarch and coconut. The taste will be different and there is a possibility that you won't get the exact consistency of the mixture. You can also change sweetcorn and raisins to Jackfruit or Raisins and cheese.
You can also take-out the sweetcorn or raisins if it is not available. before you start to cook make sure that to prepare the dish where you want to transfer the mixture because it is easily getting harder.

Step by step instruction:
1. Mix the cornstarch, coconut milk, sugar, condensed milk, evaporated milk.
2. Mix well until all the ingredients dissolved completely.
3. Add the sweetcorn
4. Transfer to a pan and heat in the medium heat. Use only low fire to make sure that the coconut will be cooked. If you use too much heat. It will easily be hardened but you will smell of uncooked coconut milk.
5. Stir continuously until the mixture thickens. Refer to my video below to make sure that the consistency is a mixture is enough to transfer it into the dish.
6. Add the raisins to a nearly cook mixture.
7. Remove the mixture if thickens.
8. Transfer to your prepared dish and sprinkle the roasted peanuts crumbs
9. Chill in the fridge for 2 hrs before serving
