Sweet Potato Binangkal with Sesame Seeds

This is my original recipe inspired by our own Pinoy Binangkal. Binangkal is a famous snack in the Philippines. I want to make healthy snacks for my family to enjoy, so I created this recipe. It is soft and yummy, so I am sure the kids will love it too. 

Sweet Potato Binangkal
Ingredients
2 cups mashed sweet potato (steam or boiled)
1 1/2 cup all-purpose flour
1 egg
2 tbsp coconut milk
1tbsp baking powder
1/2 tsp brown sugar
white sesame seeds
a pinch of salt
cooking oil for frying


Step by step instruction:
1. Mix the flour and the mashed sweet potato.
2. Add brown sugar, egg, baking powder, coconut milk and a pinch of salt.
3. Add more flour if it is too wet to make a ball.
4. Knead the dough with your hand until the consistency is enough to form a ball.


5. Make a ball to our desired size. Do not make too big.
6. Roll it to the white sesame seeds.
7. Fry in boiling cooking oil.
8. Cooldown before serving
